The theme for this week's Cupcake Challenge on Hoosier Homemade is Cake Mix. I decided to turn ordinary cake mix special by using it as the foundation for Chocolate Mousse-filled Cupcakes. I baked regular yellow cake cupcakes and filled them with chocolate mousse. I then iced them with vanilla buttercream and added some mini chocolate chips. I took pictures along the way in case anyone was interested in a little tutorial of sorts.
Start with regular yellow cake mix which you then use to fill the cupcakes a little more than halfway in order to get this size cupcake.
Prepare chocolate mousse following the directions on the package.
Fill a pastry bag, fitted with a number #12 tip, with the chocolate mousse.
Push the tip about halfway into the cupcake and squeeze until you feel some resistance.
Once you have filled all the cupcakes with mousse, frost them as usual with your icing of preferrence. I picked vanilla buttercream.
The last touch is to sprinkle the top of the cupcakes with some mini chocolate chips.
These cupcakes are very moist and everyone loves the surprise inside!
