When I read the theme for this week's Cupcake Challenge on Hoosier Homemade, I knew I had to make these cupcakes. Going to the movies has been one of our favorite summer activities and popcorn has been a crucial part of it. Summers in Florida are long, hot and humid so any inside activity is appreciated. The local movie theater played kids movies every week and thus was one of our favorite hang outs. I dedicate these cupcakes to them!
The inspiration and design is once again courtesy of Hello Cupcake, love that book and can't get enough of it!
These are mini Funfetti cupcakes frosted with homemade butter cream (tinted pale yellow) and topped with white & yellow marshmallows. If you look at them closely you'll see that there is a layer of sliced marshmallows directly on top of the icing that is then covered by whole marshmallows. The marshmallows are a mix of white and pale yellow.
The cups that the cupcakes are sitting in are from the dollar section of target.
The marshmallow topping added a nice texture to the frosted cupcakes and the kids loved the way they looked and could not believe they were cupcakes!
