I graduated from the Wilton cake decorating classes a couple of months ago. They then updated the courses and changed a few things. The teacher knew that I didn't like the old roses, so she invited me to one of the new classes to learn the new rose method. This is the result of that class.
I had a friend that unexpectedly came in to town, so I decided to make a carrot cake and have her over for some tea. The carrot cake was a perfect base for the roses I had made in class the night before.
I used homemade cream cheese frosting that I tinted in a pale rose color, even though it looks more like a "salmon" color in these pictures.The cake was very moist and the cream cheese frosting was the perfect accompaniment to it!
I can't wait to make these roses again as they were super fun and I know I'll just get better at making them with more practice. I love that they are more whimsical and less fancy that the ones I initially learned in my first class.
If you look up close you might see a couple of places where the icing isn't pefect. Unfortunately this is the type of thing that happens when you have a 2 year old at home. I decorated the cake and left it on the counter while I went to get my camera. When I came downstairs I found him sitting on the kitchen counter "decorating" it with my spatula. He looked so proud of himself that I started laughing and did my best to fix it although it was near impossible since I didn't have any frosting leftover. Thankfully my friend has kids and completely understood the misperfections.

Very pretty! I didn't know that they changed the rose technique when they updated the classes. I like the look of these ones better!
